Expansions Podcast 7/24/2012 – Buckwheat & Almond Meal Cake, Yogurt & Fruit Parfait

Janet Diane Mourglia-Swerdlow presents more dessert themed, healthy recipes, starting with a low sugar buckwheat flour and almond meal cake, and finishing with a fruit parfait containing sheep’s milk yogurt, blueberries, peaches and cantaloupe. Yum!

    Hi Janet!
    Watched your podcast yesterday afternoon, wrote down the recipe for the buckwheat/almond meal cake, went into the kitchen and made it right away. I made half of the recipe since there are only two of us here at home. I used a different oil (coconut) and I added xanthum gum (1/2 teasp) and it came out beautiful; cuts easily, comes out of the pan easily and has a wonderful texture and taste. I cannot have gluten so this is a wonderful, fast, easy treat that I can make and eat with no problem. Thank you for taking the time out of your busy schedule to do these cooking podcasts; they are much appreciated.

      I’m glad you enjoyed it! Yes, we love this cake–and it is nutritious as well as delicious! I hope you have researched my other podcasts, because I have many, many gluten-free , low carb desserts.

    I love these recipes Janet. And was so glad when in a previous cooking podcast where you alos used buckwheat you mentioned it is actually an herb, not a grain. This is wonderful news! I love using buckwheat now for lots of healthy and yummy baking. Thank you for your thorough research, my energy is increasing more and more from eating better.

      Good point–feeding the body correctly does increase the energy available to it–not to mention healthy food into the body attracts healthy food into the mind! Happy to hear you are enjoying!
