Your podcasts have inspired me to experiment! I have never been confident enough with my cooking to try it without a recipe. I’m having fun and discovering that I can make a soup with lots of interesting ingredients and it turns out alright, as well as nutritious and healthy. Thank you! :-)
Fabulous! My mother-in-law once chided me because I use recipes instead of just being able to cook a billion things without any aid. To me, recipes are like guides that give me direction. It can be fun to experiment, or, instead of having to buy a bunch of ingredients that you may only use once, to learn how to use what you have on hand. The more you can flow with the experience, I think the better the food turns out!

I made this soup tonight..so good and refreshing! The sunbutter added a nice flavor and richness. I think you could also add some thinly sliced mushrooms too if you liked. Also do a seafood variation with maybe shrimp and scallops. .thank you for this easy and delicious recipe!

okay I am eating this now. I don’t think I want to share it. thank you!! I had a hard time finding organic coconut milk, and I bought those tomatoes you used too. love the lime tanginess. :)
I always recommend http://www.vitacost.com for pricing and products. And, if you go in our “health partners” section and it is your first time at the website, you can get a $10 coupon and so can I! :) And add some organic sunbutter–yum!
ahhh I see the logic of sunbutter, because normally one would think peanut butter for a Thai recipe like this, and sun butter is a healthier choice. Thanks :)
As I was eating it, this kept coming to me, so I put it in a small bowl of the soup and it was soooo good I added it to the entire pot! So now, it is a permanent ingredient in this soup! :)
