Awesome Cake Janet! Just what I’ve been craving. As soon as I get settled in my new location, I’m going to make it in my toaster oven. I love the idea of adding the frosting as a topping. :) And it’s fun seeing both of you in the kitchen together – of course with Stewart doing the hard part, heh heh.

I think the next time there’s an earthquake, or heavy rains, or scary thunder, or snow, or anything else I might have missed, you should bake another one of these cakes, let me know, and then we can sit around consoling each other over a piece of that deliciousness. Did that cake even last for a second day of feasting?

For the healthy carrot cake recipe, is there another gluten free flour that can be substituted for almond flour? thank you!
You can really substitute whatever you want. I use almond flour because it is so low carb. :)

I made the carrot cake last night and it came out great. But I had to bake it for 40 minutes.
