For the healthy carrot cake recipe, is there another gluten free flour that can be substituted for almond flour? thank you!
You can really substitute whatever you want. I use almond flour because it is so low carb. 🙂

I made the carrot cake last night and it came out great. But I had to bake it for 40 minutes.

Awesome Cake Janet! Just what I’ve been craving. As soon as I get settled in my new location, I’m going to make it in my toaster oven. I love the idea of adding the frosting as a topping. 🙂 And it’s fun seeing both of you in the kitchen together – of course with Stewart doing the hard part, heh heh.

Is Stewart drinking a beer? Beer and carrot cake? Earthquakes will do this to a person.
That’s his water bottle! Where is YOUR mind?? 🙂

That looks yummy. I think the next time there’s an earthquake, or heavy rains, or scary thunder, or snow, or anything else I might have missed, you should bake another one of these cakes, let me know, and then we can sit around consoling each other over a piece of that deliciousness. Did that cake even last for a second day of feasting?
